Banana Cream Pie

Made this for my husbands birthday.  I wanted something other than cake, and he’s so easy when it comes to dessert that he didn’t mind one bit.




60 Vanilla Wafer Cookies

1/4 C Sugar

1/3 C Butter, melted


4 large Egg Yolks, beaten

2/3 C Sugar

1/4 C Cornstarch

1/2 tsp. Salt

3 C Milk

2 T Butter, softened

2 1/2 tsp. Vanilla Flavoring


2 Bananas, sliced thin

1 C Whipped Cream


-In bowl mix all crust ingredients together.  Press into 9 1/2 inch pie pan, bake 350 for 10 minutes.  Allow to completely cool prior to filling.

-Place eggs in medium bowl, set aside

-In medium saucepan mix sugar, cornstarch and salt together. Heat over medium heat, slowly pour in milk.  Stir constantly, if not mixture will scorch, mix until ingredients thicken and boils, boil for 1 minute.

-Pour half hot milk mixture into eggs, beat together. Gradually pour egg mixture back into pot, and stir constantly.  Bring mixture back to boil.  Boil 1 minute, remove from heat, mix into butter and vanilla.

-Place sliced bananas on bottom of pie.  Pour custard over top.  Plastic saran wrap onto top of custard (this will prevent skin from forming).  Refrigerate 4-6 hours prior to serving.  Top with whipped cream prior to serving.  Enjoy!
