In my family, everything tastes better with bacon. I used my normal cornbread recipe and simply added bacon to it. It was an amazing, and delicious addition to our chili dinner tonight.
4 Slices Bacon
1 Stick of Butter (unsalted is best)
2 1/4 C Cornmeal (I use White Lilly Buttermilk Cornmeal)
1 3/4 C Buttermilk
2 T Sugar
-Cook bacon until crisp in skillet, remove and place on papertowel lined plate. Allow to cool a bit, crumble.
-Heat oven to 400 degrees, place butter in cast iron skillet, place skillet in oven while it preheats.
-In bowl combine remaining ingredients, stir in bacon. Once butter is melted, pour most but not all into batter, stir to combine.
-Pour batter into hot skillet and bake 30 minutes. Remove from oven, allow to cool a little, and flip out onto plate. Enjoy!
