In honor of National Taco Day I created these.
1 lb. Thick Cut Bacon
2 Boneless, Skinless Chicken Breasts
1 medium Yellow Onion, rough diced
3 T Honey
2 tsp. Chili Powder
1 tsp. Adobo Chili Sauce
1/2 tsp. Garlic Powder
Salt to taste
-Place chicken in pot, cover with water, add salt, bring to boil, reduce to high simmer, cook 18 minutes. Remove chicken from pan and allow to cool, shred, set aside.
-Fry bacon crisp, break into small pieces, set aside.
-Reserve 2-3T bacon grease, cook onion in grease until caramelized, about 6-8 minutes.
-Combine honey and other ingredients in bowl.
-Place bacon and shredded chicken in skillet, pour over honey sauce, cook 3 minutes. Place in tortillas of choice. Enjoy!
