Yellow Eyed Pea Soup

No you didn’t read that wrong, there are such things as yellow eye peas, similar in looks but to me easier to add to just about any recipe than black eyed peas.  This is a soup that I made specifically to use some produce in, so I can finally clean the crisper drawer, lol.

Ingredients:

3 C Dry Yellow Eyed Beans

3 C Vegetable Broth

3 C Chicken Broth (can use veggie)

14.5 oz. Can Diced Tomatoes

8oz. Can Tomato Sauce

2 Stalks Celery, diced

1 Carrot, diced

1/2 C Pork Side Meat, diced small (optional)

1/2 Red Onion, finely diced

1 1/2 C Finely Diced Cabbage

1 Clove Garlic, minced

2 Bay Leaves

1T Dried Parsley

1 tsp. Italian Seasoning

Salt and Pepper to taste

Directions:

-In medium bowl, place beans, cover in water.  I let mine soak overnight.  Drain and rinse.  Add to crockpot.

-Add remaining ingredients.  Cook low 6-8 hours or until beans and meat are done.  Enjoy!
