Okay, we all know you cant have a true summer cookout without a side of baked beans. I have never been a fan of the predone canned ones, so here is my recipe for homemade. It takes some time, but the end result is so worth it. I made this for our traditional Labor Day cookout, and my kiddos are always pleased with beans, especially those that have been sweetened with sugar and molasses.
1 lb. Great Northern Beans
6 Slices Thick Cut Bacon, chopped
1/2 Yellow Onion, minced
2 Cloves Minced Garlic
3/4 C BBQ Sauce, (ensure GF if needed)
1 Can Tomato Sauce
1/2 C Sugar
1/3 C Molasses
2 T Worcestershire Sauce (GF option may be needed)
1 T Spicy Brown Mustard
1 T Yellow Mustard
Salt and Pepper to taste
1 Bay Leaf
-Soak beans over night, drain and place in pot, cover in water, add salt. Bring to boil, reduce to simmer, allow to cook about 1 hour. Drain, but reserve some of the broth, you may need it later.
-Place diced bacon in pan over medium heat, cook about 5 minutes, add in onion and garlic, and cook until bacon is almost done, you don’t want it crispy. Add in remaining ingredients, stir and allow to simmer 5 minutes.
-Pour mixture over beans, place beans in over safe baking dish, cover with foil bake 375 for 1 1/2 hours, stirring half way through and check to ensure there is enough liquid, if they are getting too thick, pour some of the bean broth into baking dish.
