I always make too much of everything. Maybe I believe my tiny humans will eat like actual men or maybe I haven’t a clue about portion size, whatever the reason I always have left overs. This recipe was made with leftover country style pork ribs. I must admit it was amazing and a great way to clean the fridge of leftovers that may have go to waste otherwise. You could use pulled chicken or pork and still get the same great tasting result, I’m all about using what you have versus buying ingredients for one dish.

1 1/2 C Pork Ribs, cut into bite size pieces
1 Medium Yellow Onion, sliced thin
2 T Butter
1/2 T Sugar
1 T Balsamic Vinegar
4 oz. Chopped Green Chilies, drained
1 1/3 C BBQ Sauce of choice
1 C Mozzarella Cheese, shredded
1 C Monterey Jack Cheese, shredded
1 C Cheddar Cheese, shredded
-Place butter in medium skillet over low heat, once melted add in onions. Allow to cook about 3 minutes, toss in vinegar, sugar and salt and pepper. Cook about 1 hour, stirring occasionally until they are done (about 1 hour). This takes time, but trust me the end result is so worth it.
-Roll or toss dough. Top each pie with half of BBQ Sauce, half of mozzarella, meat, onions and chilies. Divide all the cheese between the two pies.
-Bake per directions of dough. Enjoy!
