2.5 lbs. Beef Short Ribs
2 T Olive Oil
Salt and Pepper for dusting
1/4 C Yellow Onion, diced
2 Cloves Garlic, minced
1/4 C Jameson Irish Whiskey (can use beef broth)
1 1/2 C Guinness Beer (use other darker GF option if needed)
2 C Beef Broth
2 Bay Leaves
-In large skillet, over medium high heat, heat oil. Dust ribs with salt and pepper, add ribs, onion and garlic to pan. Sear all sides of meat, and cook onion until soft. Remove ribs, and place in crockpot.
-Lower temperature of pan to medium, pour in Jameson to deglaze pan. Add to crockpot. Add remaining ingredients to crockpot. Cook on low 5-6 hours, or until ribs are pull apart tender. Enjoy warm!
