This is a rich and decadent grilled. Many would consider this an “adult” grilled cheese, but my tiny humans devoured it.
This recipe is for 4 sandwiches.
1 T Butter
1/2 T Chopped Fresh Rosemary
1/2 Yellow Onion, sliced thin
1-2 tsp. Sugar (amounts depends on desired sweetness)
1 Small Apple , sliced thin (any will work, I used Gala)
4 Pieces Bacon, cut in half, cook crisp.
8 Slices Brie Cheese (large enough to cover bread)
8 Slices Bread of Choice( use gf if needed)
-In small pan, over medium low heat, melt 1 T Butter, add in onion, rosemary and sugar. Cook until onions caramelize (about 20 minutes).
-Place softened butter on inside of bread, toast over medium heat. Top with 1 slice cheese, apple slices, bacon, caramelized onions, and another slice of cheese. Top with bread.
-Place butter on outer layer of bread. Toast, pressing down, until bread is toasty and cheese is melted. Enjoy warm!
