Pimento Cheese

This is a southern classic, and is usually a staple in most refrigerators.  I have learned that the simpler the better, many recipes have a bunch of spices, but this one is definitely easy with only six ingredients.

Ingredients:

8oz. Block Sharp Cheddar Cheese, shredded

12 oz. Block Medium Cheddar Cheese, shredded

1 Block Cream Cheese, softened

1/2 C Mayonnaise (no Miracle Whip)

2 7oz. Jars Diced Pimentos

1/2 T Dill Pickle Juice

Salt and Pepper to taste (I don’t add any)

Directions:

-Drain pimentos, remove 2 T set aside.  Place remaining pimentos in food processor and mince.

-In large mixing bowl or with stand mixer, mix cream cheese and mayo together.  Add in minced pimentos and pickle juice.  Ensure well mixed, add in cheese.  Blend until combined.

-On low, or by hand add in remaining 2T Pimentos, place in airtight container in refrigerator at least 15 minutes prior to serving.

-Can add in cayenne pepper or hot sauce if you want a spicier mixture.  This is generally served as a dip, but my family loves it on sandwiches or in replacement of mayonnaise on burger.  Enjoy!
