Chicken Skewers with Chipotle Dipping Sauce

My family loves these, though the dipping sauce is a bit to spicy for the kiddos, but the hubby and I love them.

Ingredients:

2 Boneless Skinless Chicken Breasts, fat trimmed, diced into cubes

Lime Vinaigrette https://junecleaver21stcenturystyle.wordpress.com/2016/06/28/lime-vinaigrette-marinade/

1/2 Red Onion, diced into squares

Dipping Sauce:

1/2 C Sour Cream

3 Chipotle Peppers in Adobo Sauce

1 C Fresh Cilantro, diced finely (I cup prior to dicing)

1/4 C White Onion (I used large green onions)

Salt and Pepper to taste

Directions:

-Place chicken cubes and marinade in bag, marinate 1-4 hours prior to cooking.

-Mix dipping sauce together, and place in fridge until ready to use.

-Place cubed chicken on skewers, integrate red onion as you wish between chicken.

-Cook on grill, over medium low heat, for minutes, flip and cook until chicken is fully cooked and onions are tender.

Serve warm with dipping sauce.
