1 T Butter
2 Cloves Minced Garlic
1 C Quinoa (I used tri-color)
1 3/4 C Vegetable Broth
3/4 C Grated Parmesan Cheese
Salt and Pepper to taste
-Over medium heat, melt butter, stir in garlic. Allow to brown slightly.
-Stir in quinoa and broth. Bring to boil and cook covered for 20 minutes.
-Remove from heat, stir in cheese, salt and pepper. Allow to cool and soak up any liquid (there shouldn’t be much). Serve warm. Enjoy!
