6 1/4 inch Pork Loin Chops, fat cut
1 Can Coconut Milk
1/4 C Water
3 Cloves Garlic, minced
2 tsp. Salt
1/2 tsp. Onion Powder
1 C Coconut Flake
2/3 C Bread Crumbs(use GF if needed)
1 tsp. Ground Turmeric
-Combine the coconut milk, water, garlic and onion powder in bowl. Add in chops, and ensure all are coated, place in fridge and marinate 2-4 hours.
-Combine coconut flake, bread crumb and turmeric in shallow dish (I use a pie plate).
-Shake off excess marinade, place in dish with coating, pat to ensure all sides are coated.
-Place on parchment and bake 400 degrees for 15 minutes tented with aluminum foil. Uncover and bake an additional 10 minutes. Remove from oven, cover with foil and rest 5 minutes before serving. Enjoy!
