Pork Lo-Mein

Ingredients:

1 lb. Pork Loin Chops, sliced thin, diced

1/2 C Diced Bell Pepper

1 Celery Stalk, diced

1 Carrot, diced or chopped

1/3 C Onion, diced

2 Cloves Garlic, minced

5 Baby Bella Mushrooms

Lo-Mein Noodles (I used thin rice noodles)

2 T Peanut Oil for cooking

Marinade:

2T Cornstarch

1 tsp. Rice Wine Vinegar

1 tsp. Sugar

1 tsp. Soy Sauce (use GF if needed)

2 T Water

Sauce:

1/2 C Water

1/4C Soy Sauce (use GF if needed)

2T Miso Paste

2T Cornstarch

1 tsp. Sriracha Sauce

1 tsp. Rice Wine Vinegar

1 tsp. Sesame Oil

1/4 tsp. Ground Ginger

Directions:

-Combine marinade ingredients, add in pork, allow to sit for 30 minutes, stirring once.

-Combine sauce ingredients, set aside.

-Cook noodles per package directions.

-Heat oil in skillet over medium heat, add in pork, cook 5 minutes, stirring often to prevent sticking.  Add in veggies an cook an additional 5 minutes.

-Pour in sauce, stir well, reduce temperature to medium low, and simmer for 15 minutes.

-Serve pork and veggie mixture over noodles. Enjoy!
