1 Large Bundle of Broccoli (mine usually has 2-3 heads per bundle)
3 T Butter
3T GF Flour (regular is fine)
1 C + 1T Milk
1/2 C Heavy Cream
1/2 C Shredded Sharp Cheddar Cheese
1/4 C Shredded Colby Cheese
1/4 C Shredded Swiss Cheese
1 tsp. Seasoning Salt
1/2 tsp. Ground Mustard
1/4 tsp. Fresh Ground Black Pepper (more or less to taste)
1/4 tsp. Granulated Garlic
1/4 tsp. Paprika
1/4 tsp. Turmeric (optional)
1/8 tsp. Onion Powder
-Steam broccoli for 5 minutes, allow to drain any water, place in baking dish with lid (can use foil). Set aside.
-Mix cheeses together, set aside.
-In medium pot, over medium low heat, melt butter, stir in flour. Allow to cook 3 minutes, whisk in milk and cream. Make sure roux is blended. Whisk in spices, increase temp to medium, allow milk to heat.
-Slowly stir in 3/4 C cheese, as cheese starts to melt, reduce temperature to ensure scorching doesn’t occur. Once cheese is melted completely, pour evenly over broccoli. Sprinkle with remaining cheese.
-Place lid or foil over pan, bake 350 degrees for 10 minutes, remove lid, and bake until cheese is melted and bubbly. Remove from heat, cover and allow to rest before serving. Enjoy!
