Rustic Italian Sausage Stew



1 C White Beans, soaked (drain before adding to crockpot, about a 15oz. Can of beans, drained and rinsed)

1 lb.  Mild Italian Sausage

3 Russet Potatoes, peeled and diced

2 Carrots, diced

28oz. Can Stewed Tomatoes

2 1/2 C Cabbage, rough chopped

1 medium Red Onion, diced

3 Cloves Garlic, minced

1 Celery Stalk, diced

5C Turkey Broth (adds more flavor, can use chicken or vegetable broth)

1/2 T Italian Seasoning

2tsp. Dried Chives

2 tsp. Dried Parsley

Salt and Pepper to taste


-Brown sausage, depending on meat, you may not need to drain, you want some amount of the fat.

-Add cooked sausage and all other ingredients to crockpot, cook low 4-6 hours, high 2-4.  When potatoes are done, soup is done.  Enjoy warm!
