This is a relatively easy recipe that can be made ahead of time and baked later, or immediately. I hate eggs, and even I think this is amazing.
1 lb. Breakfast Sausage
9 Eggs, beaten
1 C Milk
1/2 Fresh Spinach, rough chopped
3 Green Onions, sliced thin (green and white part)
1/2 tsp. Fresh Cracked Black Pepper
1 tsp. Garlic Salt, any salt will work
1 tsp. Dried Oregano
1 lb. Hashbrown Potatoes
2 C Cheddar Cheese, shredded (I used swiss and cheddar)
-Cook sausage until it is well broken up and cooked through. Drain grease, but reserve for later.
-Cook hashbrowns over medium high heat, about 8 minutes a side until lightly golden brown.
-Combine eggs, milk, spinach, green onions, and seasoning.
-Grease 13X9 in pan, lay cooked hashbrowns on bottom, sprinkle sausage over, pour egg mixture over, top with cheese.
Bake 350 about 40 minutes, allow to cool and rest about 10 minutes, Enjoy!
