Please note that cooking times may vary depending on how done you enjoy your roast beef. We are a rare beef family, but a bit longer in the oven will not do any harm. Control the salt and spices as you want or wish.
Eye Round Beef Roast (mine was 4.7 lbs)
Seasoning Salt (Regular salt will work just fine)
Fresh Ground Black Pepper
Chinese Five Spice (optional)
Any other spices or seasonings you desire
-Rinse roast, pat dry with paper towels.
-Coat in olive oil, and seasonings, ensure all sides and ends are coated, pat in spices to make them adhere to roast.
-Foil line baking pan, place baking rack over foil, then roast on top of rack, allow to sit as oven heats.
-Bake 500 degrees, 20 minutes, reduce temperature to 350 degree for 30 minutes, tent with more foil for an additional 20 minutes. As stated above cook longer for more done roast.
-Remove from oven, and allow to rest for 20 minutes, place in refrigerator for 1-2 hours prior to slicing. Slice as thin or thick as you wish.
