Rustic Chicken and White Bean Soup



2 Boneless, Skinless Chicken Breast, diced small

4 Cans White Beans, drained and rinsed

1 Medium Yellow Onion, diced

2 Cloves Garlic, minced

1 Carrot, diced

1 Celery Stalk, diced

1 C Diced Tomatoes

2 Bay Leaves

1/2 tsp. Dried Oregano

1/4 tsp. Dried Thyme

1/4 tsp. Dried Rosemary

1/4 tsp. Dried Sage

1/4tsp. Dried Parsley

3 C Chicken Stock

2 1/2 C Vegetable Broth

1/2 C Quinoa

1/2 C Fresh Spinach, rough chopped


-Add all ingredients to crockpot, cook low 6 hours.  Add in quinoa and spinach about 30 minutes prior to serving. Enjoy!
