6 Red Potatoes, cut into 1/4 inch slices
Olive Oil for brushing
Seasoning Salt, for dusting
Onion Powder, for dusting
Garlic Powder, for dusting
1 1/2 C Cheddar Cheese, shredded
6 Slices Bacon, cooked and crumbled
2 T Fresh Chives, diced
1 C Sour Cream
4tsp. Dried Chives
1/2 tsp. Garlic Salt
1/4 tsp. Onion Powder
-Whisk all ingredients of sauce together, set aside.
-Brush olive oil on both sides of potato slices, dust each side with onion powder, garlic powder and seasoning salt.
-Place on parchment paper lined baking sheet. Bake 400 degrees for 15 minutes, flip over and bake additional 15 minutes.
-Remove from oven top with bacon and cheese, bake an additional 5-7 minutes or until cheese is melted and bubbly. Remove from oven and sprinkle chives on top. Serve warm with dipping sauce. Enjoy!
