Taco Fries

This is an interesting twist on taco flavors and on the classic cheese fries so many of us love.

1 24oz. Bag Steak Fries, cooked per directions

1 lb. Lean Ground Beef

7 oz. Can Roasted Green Chillis, drained, diced

2 1/2 T Taco Seasoning

1 C Shredded Mexican Blend Cheese (cheddar works great)

Cheese Sauce:

2T Butter

1 T Flour (can use cornstarch)

1C +1T Milk

2 C Cheese, shredded (I used Mexican blend, but any combo works)

1/4 C Salsa

1 tsp. Salt

1 tsp. Paprika

-Brown meat, add Chillis, cook a few minutes, add in taco seasoning, set aside.

-Add butter over medium/low heat in small saucepan.  Once butter is melted add in flour, whisk to make rough.

-Add in milk, salt and paprika.  When roux is dissolved slowly add in cheese a little bit at a time until all cheese is added and melted.  Stir in salsa.

-Mix cheese sauce into meat mixture.  Pour evenly over cooked fries, sprinkle 1 C cheese over entire pan.

-Bake 350 about 7 minutes or until cheese is melted and meat mixture is bubbly.  Serve warm, you will need a fork for this meal.

Top with your favorite taco toppings, salsa, sour cream, refried beans, ect.
