This is a one pan meal, which is a huge plus in my book.
1 Large Boneless, Skinless Chicken breast, cut into small cubes
1 Medium Onion, diced
2 Cloves Garlic, minced
1 Medium Head Broccoli, florets removed
1 3/4C Chicken Broth
1 C Quinoa (I used red )
1T Italian Dressing (can use Olive Oil)
3/4 C Cheddar Cheese, shredded
1/2 C Swiss Cheese, Shredded (Can use more cheddar)
Salt and Pepper
1/4tsp. Dried Thyme
1/8tsp. Dried Parsley
1/8tsp. Ground Sage
-In large pan over medium heat, heat dressing, sprinkle with salt and pepper. Add onion. Cook onion about 2 minutes, add garlic, cook another 2 minutes. Add in Chicken.
-Cook chicken about 5 minutes, it doesn’t have to be fully cook, since it will finish cooking later in recipe.
-Stir in broth and quinoa. Bring to boil, add parsley, sage and thyme, cover and simmer 12-13 minutes. Stir mixture, sprinkle broccoli on top, cook additional 8-9 minutes or until quinoa and broccoli is cooked.
-Top with cheese, cover and remove from heat. Allow to sit until any broth is absorbed and cheese is melted. Enjoy!
