Seared Scallops with Bacon



1 lb. Scallops

4-5 Slices Bacon, diced

1 Clove Garlic, minced

2T Lemon or Lime Juice* (I prefer lime)

2T Reserved Bacon Grease

Lemon Pepper to taste (regular pepper is fine)

3 T White Wine

2 T Butter, softened


-In large skillet over medium heat, cook bacon until its crisp.  Remove from pan, place on paper towel to absorb grease.

-Reserve 2 T rendered fat.  Lightly pepper scallops.  Place in pan, sear each side about 3 minutes per side. Once cooked, remove from pan.

-Add lemon/lime juice, garlic and white wine.  Scrap any scraps off of bottom of pan, cook about 2 minutes.

-Remove pan from heat, add in butter, once butter is mixed in sauce, add bacon and scallops. Enjoy warm!

*if using lime juice only use 2tsp.  Any more and it may be too tart.
