5 Bean Soup

This is a vegetarian meal, you can add any meat you wish to it if you desire.  The constituency is similar to chili, but without the flavor of chili.

Ingredients:

1 Can Black Beans, drained and rinsed

1 Can Light Kidney Beans, drained

1 Can Pinto Beans, drained

1 Can White Beans, drained

1 Can Chili Beans, don’t drain

1 Large Shallot, minced

2 Cloves Garlic, minced

1 28oz. Can Crushed Tomatoes with Italian Seasoning

2 Bay Leaves

1 T Ground Mustard

1T Salt

Pepper to taste

1/2 tsp. Ground Sage

1 tsp. Dried Thyme

1 C Diced Tomatoes (optional)

1 quart Vegetable Broth

2/3 C Chopped Spinach

Directions:

-Add all ingredients but spinach to large pot, bring to boil and simmer about 1 hour, about 10-15 minutes before serving add in spinach and stir.

-Serve hot. Enjoy!
