Cheesy Chicken Bacon Ranch Casserole with Rice



2 C Rice*see note

3 C Water or Chicken Broth*see note

2 Boneless, Skinless Chicken Breasts, shredded (I boil mine in water for about 20 minutes, cool and shred)

1 C Sour Cream

1 C Shredded Cheddar plus 1/4 C more

3/4 C Chicken Broth

2 T Ranch Seasoning (the packet kind)

1 Can Cream of Mushroom Soup (can use cream of chicken)

Salt and Pepper to taste

1/3 C Crumbled Bacon, can use more


-Note- Follow your rice directions for 2 cups of rice (mine called for 4 cups water) and reduce water amount by 1.  Cook per package directions, set aside

-In large bowl combine all ingredients except 1/4 C cheese, grease 13X9 inch baking dish, pour rice mixture into pan. Top mixture with 1/4C Cheese.

-Bake 350 for 20-25 minutes or until cheese is melted.  Allow to cool some before you serve. Enjoy!
