These cookies are amazing. Every year around the Christmas season try to empty out all my random ingredients. I found half a bag of peppermint chips, so this recipe was created.
2 C plus 2T All Purpose Flour
3/4 C Cocoa Powder
1/2 tsp. Salt
2 1/2 Sticks Butter, softened
2 C Sugar
2 tsp. Vanilla (as always, I over pour mine)
1 C Andes Peppermint Chips
-In medium bowl, mix flour, salt, baking soda, and cocoa together. Set aside.
-In a large bowl or stand mixer beat on medium speed the butter and sugar together until butter become light and fluffy. Beat in each egg individually and the vanilla. Lower speed to low, and a little at a time beat in flour mixture. Once all of flour is combined, add chips. Only beat long enough to incorporate chips, over beating will break up chips. Cover dough and refrigerate at least 1 hour.
-Parchment Paper line 2 baking sheets. Scoop the dough (about 2 T per cookie) on the cookie sheet. Bake 350 degrees for 10-12 minutes. Cool cookies on sheet 5 minutes, remove from sheet and cool completely. Enjoy!
