1 lb. Ground Beef (can use deer, turkey or chicken without problem)
1 Medium Bell Pepper, diced (I used a combo of red, yellow about 1/3 C)
1 Medium Onion, diced (I used a red onion)
2 Cloves Garlic, minced
1 Can Sloppy Joe Seasoning (Our GF Version Here: https://junecleaver21stcenturystyle.wordpress.com/2015/12/04/homemade-sloppy-joe-sauce/)
1/2 C + 3/4 C Cheddar Cheese, shredded, separated
1 Bag Martha White GF Cornbread (Can use box of Jiffy if none Gluten Free)
1/3 C Spinach, chopped (optional)
-In large skillet (use one with a lid or ability to cover), over medium heat, add meat, cook until halfway cooked through, add in onion, garlic, bell pepper. Cook until meat is completely done, add in spinach and sauce. Cook 5 minutes, cover, lower temperature, cook 5 minutes longer.
-Allow mixture to cool and thicken, once thickened (this will happen as it cools), place meat in 11X7 inch baking dish, sprinkle with 1/2 C cheese.
-Mix cornbread per package directions, pour over meat and cheese. Bake 350 for 30-40 minutes or until cornbread is done.
-Remove from oven and top with 3/4 C cheese, allow to cool at least 15 minutes. This will allow cheese to melt, and will allow for easier cutting into servings.
