I always have left over mashed potatoes, so this is the recipe I typically repurpose them with. My kids can eat them all themselves.
3 C Mashed Potatoes (roughly)
1/2 C Cheese, shredded (I typically use cheddar, but just about any will be fine in this recipe)
2 Eggs, beaten
1/2 C Flour
Oil for frying
-Mix all ingredients together in bowl.
-Heat oil in pan, you want about 2 inches to cover top and bottom of cake.
-Using about 1/8 C of mixture, add to hot oil. Fry 3-5 minutes or until both sides are golden brown. Remove from oil, place on paper towel lined plate to drain excess grease. Serve warm.
-These are great with cheese, chives, bacon crumbles, or sour cream as topping. Enjoy!
