Twice Baked Mashed Potatoes

These are amazingly simple to make and taste better than I expected when I made them.




2 1/2-3 lbs. Russet Potatoes, peeled and cut into cubes

1 3/4 C Shredded Cheddar Cheese, divided

4 Pieces Bacon, cooked crisp and crumbled

4T Butter

1/2 C Milk

Salt and Pepper to taste


-Place cut potatoes in medium pot, cover with water and a dash of salt.  Bring to boil, lower temperature and allow to boil 20 minutes.  Drain, and return to pot.  Cook on medium about 2-3 minutes (this will cook off any excess water).

-Mash potatoes, stir in butter until melted and well incorporated.  Stir in milk, and 3/4C cheese.  Ensure cheese is mostly melted.  Stir in 1/2 of crumbled bacon, salt and pepper.

-Grease a 11X7 inch baking pan.  Pour potato mixture into pan, even out as much as possible.  Sprinkle remaining 1 C Cheese.  Bake 400 degrees for 45 minutes.  Remove from oven and sprinkle remaining bacon on top.  Allow to cook 10-20 minutes, or until cool enough to cut out slices from pan.  Enjoy!

Great topped with sour cream and green onion if you desire.
