Cauliflower Fried Rice

This is an amazing spin on classic fried rice.  Its also a great way of sneaking more veggies into your meals.

Ingredients:

1 Head Cauliflower, florets removed

2 Carrots, diced or sliced thin

1 Onion, diced

2 Stalks Celery sliced thin

3 Green Onions, thinly sliced

1/8C Frozen Peas

2 Cloves Garlic, minced

1/4C Soy Sauce (more or less to taste)

2 Eggs, beaten (can use more egg whites if you desire, I used 4)

2 T Sesame Oil

Sriracha Sauce to taste

Directions:

-Place cauliflower florets in food processor, process until it reaching rice like consistency.

-Heat oil in large skillet over medium heat, add in cauliflower, sauté about 6 minutes or until cauliflower browns a bit.  Add in other vegetables, and soy sauce.  Sautee until veggies soften a bit.

-In another pan, fry eggs. Set aside.  When veggies are done, stir in Sriracha and egg. Serve warm. Enjoy!
