“Poor Man’s” Eggroll

I am a huge fan of eggrolls, often times making them out of whatever I have on hand.  This is one of those recipes. This recipe makes about 8-10 egg rolls.




1/2 C Rough Chopped Cabbage

2 Carrots, sliced thin ( the long way down carrot)

1 Celery Stalk, diced

1/8 C Onion, diced

1/2T Soy Sauce

1 tsp. Sriracha

1/4 tsp. Ground Ginger

1/2 tsp. Garlic Powder

1 tsp. Sesame Oil

1T Olive Oil


-Combine all ingredients bit olive oil in bowl.  Heat olive oil in skillet over medium/low heat.

-Add in veggies, sauté for about 5 minutes.  Add in 1/4 C water, cover pan and cook about 10 minutes.

-Spoon about 1 T of cooked mixture into eggroll wrappers.

-Fry or Bake.
