Sweet Potato and Apple Soup

I figured this would be an interesting twist to soup.  It turned out amazing and completely incorporated the tastes of fall to a tee.  I hope you all enjoy it as much as my family did.

Ingredients:

2 Large Sweet Potatoes, peeled, diced small

2 Apples, peeled, diced (if you want sweet go towards gala, not so sweet use granny smith)

4 C Vegetable Broth

2 Carrots, peeled, diced (optional)

1 Small Onion, caramelize

1 Clove Garlic, minced

1 tsp. Cumin

1/2 tsp. Dried Sage

1/4 tsp. Nutmeg

1 tsp. Salt

1 tsp. Pepper

1/2 tsp. Dried Thyme

1 C Mini Meatballs (optional) https://junecleaver21stcenturystyle.wordpress.com/2015/09/29/mini-scallion-meatballs/ These or frozen or any other will work

Directions:

-Combine all ingredients in crockpot, low 6 hours.  Place ingredients in blender or use an immersion blender to smooth out all ingredients.

-Add meatballs (if frozen, I suggest adding sooner) about 20 minutes prior to serving.

-Enjoy! I like diced scallions and sour cream on mine.
