Bacon Chive Scalloped Potatoes

My family loves potatoes and since I never think to buy the boxed stuff, I have found a way to make it fresh at home.



6 Medium Potatoes, peeled and sliced thin (I use reds)

1 Small Onion, minced

3T Butter

3T Flour (to make GF, simply use GF Flour)

2 1/2 C Milk

1/8 tsp. Mustard Powder

1 tsp. Garlic Salt

1/2 tsp. Black Pepper (can use tobacco sauce)

4 Slices Bacon, cooked crisp, broken into pieces

1 T Chives, chopped

1 1/2 C Cheese (Optional) I use cheddar

1 T Butter, cut into small pieces


-In large casserole dish place potatoes (there is not right or wrong way to put them in, I simply do layer upon layer).

-In small saucepan over medium low heat, melt 3 T Butter.  Add in onion.  Allow onion to cook about 3 minutes, add in flour.  When paste is created, slowly stir in milk, once paste is dissolved, add in rest of seasoning and allow mixture to come to boil.  Once it boils, pour over potatoes.

-Top with cut up butter and place sporadically over milk mixture.  Top with cheese if you desire.

-Cover bake 350 foe 30 minutes, uncover and bake additional 1 hour.  Remove from oven and cover and allow to sit about 10 minutes.  Enjoy.
