I love this soup, but hate having to go out to get it, so with some trial and error I have created my version of one of my favorite soups.
2 28oz. Cans Stewed Tomatoes, drained
4 C Vegetable Broth
1 Carrot, minced
1 Celery Stalk, minced
1 Onion, minced
2 T Flour
1/2 tsp. Dried Thyme
At least 1 t Dried Basil (I did mine to taste)
1/2 tsp. Red Pepper Flake (optional)
1/2 C Half and Half
-In medium skillet over medium-low heat, sauté carrot. celery and onion for about 3 minutes. Stir in flour and cook until flour browns a little, about 5 minutes.
-Add above mix and all other ingredients except half and half to crockpot.
-Cook 6 hours low, blend mixture either in a blender or with hand blender. You don’t want chunks, this soup should be smooth.
-Stir in half and half. Enjoy.
Great with sour cream and croutons.
