Lasagna Noodle Soup

This recipe is amazingly delicious.  It seriously reminds me of lasagna.  Its a great one for the crockpot as well as on the stove.

Ingredients:

1 lb. Ground Beef (can use Chicken or Turkey)

1 Onion, diced (I prefer Red Onion)

1 Bell Pepper, diced (I use a mixture of Red and Green, equaling about 1/2C total)

3 Cloves Garlic, minced

2 Cans Diced Tomatoes (Can use about 5-6 small to medium fresh tomatoes, this is best for the crockpot)

1 8oz. Can Tomato Sauce

15-32 oz. Jar of Red Sauce (I like mine really saucy so I use a quart sized jar, any brand or homemade is fine)

4C Vegetable Broth (Can use chicken or beef, I prefer to taste of veggie)

2tsp. Italian Seasoning

1 tsp. Garlic Salt

Pepper and Salt per serving to taste

1 tsp. Dried Thyme

1T Brown Sugar

2 C Lasagna Noodles, broken into pieces (to make GF use a GF noodle)

2 C Mozzarella Cheese, shredded

1/2 C Parmesan Cheese, shredded

Directions:

-In large skillet over medium heat, brown beef, when beef is about half way done, add in onion, bell pepper and garlic.  Cook until beef is completely brown.  Drain off grease.

-If doing crockpot, add beef to pot along with everything but noodles and cheese.  Set pot on low about 6 hours.  About 30 minutes prior to serving, add in broken noodles, cook until tender. Stir in parmesan cheese just before serving.  Add some mozzarella cheese to individual servings.  Enjoy!

-If doing this on stove, add in all other ingredients but noodles and cheese.  Bring mixture to a boil.  Lower heat, simmer about 20 minutes.  Add in noodles and cook until tender. Stir in parmesan cheese; then serve as stated above.
