BBQ Chicken Nachos

I always seem to have left over chicken of some kind in my house, so I have been playing around with how to repurpose them.  This was a hit with the husband and the kiddos.  Its an appetizer that can also be served as a meal if you desire.

Ingredients:

1 Bag Tortilla Chips (I used blue corn ones)

1 1/2 C Shredded Chicken (about 1  medium boneless/skinless breast)

1/3 C BBQ Sauce (Our version here:  https://junecleaver21stcenturystyle.wordpress.com/2015/01/30/homemade-bbq-sauce/  )

1 1/2-2C Shredded Cheese (I use Colby/jack)

1 Red Onion, sliced thin and sautéed (can caramelize)

Banana Peppers (the pickled ones from the store)

Directions:

-Preheat oven to 300 degrees.  Line baking pan with aluminum foil.  Pour entire bag of chips out, try to make them lay evenly on pan to ensure even toppings.

-Sprinkle about 1/2 c cheese over chips.  Top with chicken, onion and remaining cheese. Can top with peppers now or what until you serve.

-Bake about 8 minutes or until cheese is melted.  Enjoy!
