Taco Cheese Sauce

I use this recipe as my cheese on tacos, but its an amazing nacho cheese as well.




2 T Butter

1T Cornstarch

1C+1T Milk

2 C Cheese, shredded (I use cheddar)

1tsp. Salt

1 tsp. Paprika

1/8C Onion, minced

1/4 C Bell Pepper, minced

1 Roma Tomato, minced


-In small saucepan over medium-low heat, add a small amount of oil and salt.  Add in tomato, onion and bell pepper.  Cook until tomato if fully cooked, and peppers and onions are softened.  I place my cooked vegetables in a food processor and make tiny , but this isn’t necessary.  Set aside.

-In sauce pot over medium heat, melt butter.  Whisk in cornstarch, stir until roux is made.  Add in milk, ensure as you stir all of the roux is dissolved.  Add in salt and paprika, stir well.  Add in cheese and lower heat.  Continue to stir until cheese is melted, but make sure it is scorching to the bottom of the pot.

-Once cheese is melted add in vegetable, stir well.  Serve and Enjoy.

Can add hot peppers to onion mix if you desire.  I have also added in already prepared salsa.
