In honor of National Creamsicle Day, I am posting one of my favorite recipes. I make this fudge every year for Christmas, but its so delicious that I make it often throughout the year as well. Many may have their own recipes, but this is mine.
3/4 C butter
2 C Sugar
3/4C Heavy Cream (don’t substitute)
12 oz. White Chocolate Chips
7 0z. Marshmallow Cream
1 T Orange Extract
Orange Food Coloring (amount depends on color you wish to achieve)
-Place parchment paper in 13X9 pan. I suggest spraying paper with cooking spray. Set aside.
-In large saucepan, over medium heat, combine sugar, cream butter. Stir constantly until sugar dissolves and butter melts.
-Bring mixture to boil, boil for about 4 minutes.
-Remove pan from heat, stir in marshmallow cream and chocolate chips. Once everything is mixed, remove about 1/3 of total mixture and set aside.
-Add orange extract and food coloring, mix well. Be speedy or fudge may start to set and will not provide the best end result.
-Pour orange fudge into pan and spread out. Spoon reserved white fudge and drop sporadically onto orange. Using a butter knife, pull the white fudge through orange into swirls. This makes for the pretty version we all know.
-Refrigerate fudge for 1 hour. Remove paper and fudge from pan, I usually flip it upside down onto a cutting board. Using a sharp knife, cut fudge into pieces.
-Good about 1 week in airtight container. I recommend refrigerating it, or it may become soft.
