Black Bean Salsa

I serve this often in salad on our meatless nights, but it is also great over pasta and even as a dip with tortilla chips.

Ingredients:

3/4 C Corn (canned, fresh (cooked))

1 Can Black Beans, drained and rinsed

1/2 C Roma Tomatoes, diced small

1/2C Bell Peppers, diced small (I used orange, yellow, red, green is fine)

1/2 C Red Onion, diced small

1 Jalapeno, diced small (remove seeds for milder flavor)

1T Olive Oil

1 tsp. Garlic Salt

Handful Fresh Cilantro, minced (if using dried use 1/2T-1T)

Directions:

-Mix all ingredients together.  Store covered in refrigerator until ready to use. Enjoy.
