Beef and Broccoli

imageIngredients:

2 lbs. Flank Steak (or other thin beef), cut into thin strips

1 Large Head Broccoli, florets only

3T Olive Oil

Marinade:

1T Soy Sauce (low sodium is best)*

1 tsp. Sugar

1 1/2 T Water

1/2tsp. Baking Soda

1T Cornstarch

2 T Olive Oil

Sauce:

1/2 C Soy Sauce(low sodium)*

2 T Brown Sugar

3 Cloves Garlic, minced

1 T Cream Sherry

3T Olive Oil

1/2 C Beef Broth

1/8tsp. Onion Powder

1 T Cornstarch

1 1/2 T Flour*

Directions:

-Mix marinade, place beef in covered container or plastic bag, pour marinade over beef, and allow to marinade at least an hour.  Over night works well too.

-Mix sauce together, ensuring the cornstarch and flour is mixed well (if not it may become clumpy) and set aside.

-In large skillet over medium heat, heat oil.  Add broccoli and cook about 5 minutes, remove and set aside.  Add the beef and marinade to pan, lower heat. Cook beef until brown on sides but still pink in the middle.  Add broccoli and sauce to pan, stir well.  Lower heat to low, cover, and simmer about 10-12 minutes or until beef is cooked through and broccoli is soft.

Serve over rice or noodles.  Enjoy.

*To make this recipe Gluten Free use GF Soy Sauce, our version is GF   https://junecleaver21stcenturystyle.wordpress.com/2015/05/10/soy-sauce-in-a-bind/         use Gluten Free Flour instead of Regular.
