I use this for grilled and baked chicken. The flavors of this marinade mesh well with just about any side dish.
1/2 C Olive Oil
1 tsp. Salt
1/4 tsp. Black Pepper
1/4 tsp. Cayenne Pepper
1/2 tsp. Paprika
1/4 tsp. Cumin
1 T Dried Onion Flake
1 T Dried Parsley (can use fresh, just use more)
Pinch Cinnamon (optional)
1 C Beer (your choice)
-In a large bowl or measuring cup mix all ingredients together. Place chicken in large Ziploc bag, pour marinade over chicken, shake bag to ensure all chicken is coated. Marinate for at least 1 hour, but not more than 6 hours.
-Cook as you wish. FYI: using a meat thermometer, chicken breasts are “done” at 160 degrees.
If roasting chicken you can take pour all of marinade in bag into baking pan, and use reaming amount in pan once chicken is done to make gravy.
