Creamy Leftover Mexican Chicken Dip

I typically make this recipe as an appetizer, but tonight it was dinner.  I had leftover chicken from the other day and figured this would be the best way to use it up.



1 Rotesserie Chicken (and kind of chicken is fine.  You want at least 1C)

1 1/2 C Pico De Gallo (can of rotel is fine)

1 1/2 C Shredded Cheddar Cheese

1Can Black Beans, drained and rinsed

1 Package Cream Cheese, softened ( can place in bowl in microwave)

Salt and Pepper to taste


-Mix all ingredients together, only using 1/2 C cheese.  Place mix in medium baking dish.  Top with reamining cup of cheese.

-Bake 350 for 20 minutes, or until cheese is melted and mix is heated through.

-Best served with tortilla chips.
