Cowboy Casserole

My mom made this a lot as a kid.  Its a great meal, everything is in one dish.  This recipe can also be frozen.



1lb. Ground Beef

1 Onion, diced

1 Ear of Corn, Corn removed from stalk (Can use canned)

1 Can Black Beans, drained and rinsed

1 Can Condensed Cheese Soup (Can use Cream of Mushroom)

2 C Cheddar Cheese

1/4C Bell Pepper, diced

3 Cloves Garlic, minced

1/2C Milk

4T Sour Cream

Salt and Pepper to taste

1Bag Tater Tots or Hashbrowns


-In large skillet combine beef, onion, peppers, garlic over medium heat.  Cook until onion becomes translucent and meat is no longer pink.  Drain grease.

-In bowl combine soup, milk and sour cream.  Whisk until blended.  Stir in beef mixture, corn and black beans. Stir in 1 C Cheese.

-In 13X9 baking dish, layer half the bag of tater tots on bottom of pan.  Try not to leave huge holes, but some are fine.  Spoon soup/beef mixture evenly over top of tots.  Layer top with remaining tots, then coat with last cup of cheese.

-Bake 350 for 25-30 minutes, or until top is golden brown.


This recipe can be frozen.  Just cover baking dish with freezer paper, and place in freezer, good for about 3 months.
