2C Peeled and grated Zucchini*
2Green Onions, diced
1 Clove Garlic, minced
Salt and Pepper to taste
1/2-1 C Bread Crumb (I used GF, so I needed more)
1/2 C Parmessan Cheese, grated
2 Eggs, beaten
1/4 C Fry Oil
-Mix all ingredients together in bowl, heat oil in skillet over medium/high heat.
-Spoon 1/8-1/4C mix out, form into ball, flatten. Place in hot skillet. Cook about 4-6 minutes per side.
-Place cooked fritter on paper towel lined plate to drain off excess grease.
*you can place grated zucchini in salted cold water til ready to use, this will remove excess water. Drain and wring out water, you should do this anyway to avoid fritters from being mushy.
