Chocolate Zucchini Bread

Ingredients:

2C Grated Zucchini

1 C Chocolate Chips ( I use dark chocolate chips)

Dry:

1C All Purpose Flour

1/2 C Cocoa Powder (the one used in baking not hot chocolate)

3/4 tsp. Baking Soda

1/4 tsp. Baking Powder ( I use an aluminum free version)

Dash of Cinnamon (optional, but it’s good)

Wet:

2 Large Eggs

1tsp. Vanilla Extract

1/2 C Oil ( I used coconut, which will add coconut to taste, but vegetable is fine)

1/2 C Granulated Sugar

1/2 C Packed, Light Brown Sugar

Directions:

-In large bowl, mix all dry ingredients together.  Set aside.  In another bowl mix all wet ingredients together until sugar is well blended.

-Mix wet mixture into dry, stir until dry mixture is wet.  Fold in zucchini and chocolate chips.

-Grease loaf pan, pour mixture in to pan, bake 350 degrees for about 45 minutes, or until toothpick placed in center comes out clean and bread has risen.

-Remove from oven and place on baking rack for about 10 minutes before removing bread from pan. Allow bread to cool completely before slicing. Enjoy!
