Beef and Broccoli Lo-Mein

Ingredients:

1-2 lbs. Thin Sliced Beef (I used Sirloin)

1 Carrot, julienned (or cut small),optional I use for color

1 Onion, Sliced Thin ( I used a red onion for color)

1/2C Broccoli, chopped small

2 Cloved Garlic, minced

2T Cooking Oil(I used olive oil)

Sauce:

1/4 C Beef Broth

1/4 C Soy Sauce

1/8 tsp. Ground Ginger

2tsp. Rice Wine Vinegar

1T Sugar

Directions:

-Mix sauce ingredients together in bowl,meet aside.

-In large skillet over medium heat,heat oil.  Once oil is hot add carrot and broccoli, cook about 5-7 or until they soften a bit.  Reduce heat to medium/low, add remaining ingredients, sauté 7min, turning beef over half way through time.

-Pour sauce over ingredients in pan, cover and simmer about 10 minutes, or until beef is desired done to your level of doneness and vegetable are soft(you don’t want them too soft or they may become mushy as they sit before serving).

Serve over noodles or rice. Enjoy.
