1 lb. Potatoes (halves and diced)
1/2-1 Onions, sliced thin
2 T Olive Oil
2 T French’s Dijon Mustard with Chardonney (reg. Dijon okay)
2 T Maple Syrup ( use the real stuff)
1/2 tsp. Salt
1/2 tsp. Fresh Ground Black Pepper
Mix all sauce ingredients together until well blended, set aside.
In bowl place sliced onion and potatoes, and coat well in sauce.
Place in baking dish, cook 425 35-45 minutes, flipping over half way through.
