Tequila Lime Tart

Ingredients:

Crust:

1 Box Nilla Wafer Cookies

1/3 C Pine Nuts (Can use silvered Almonds)

1/2C Butter, melted

Filling:

2 Large Egg Whites

1T Sugar

4 Large Egg Yolks

1 Can Sweetened Condensed Milk

1/2 C Fresh Squeezed Lime Juice (I use Key Limes)

1/4 C Tequila (I over-pour this a bit)

Directions:

Crust:

Place cookies (all but 8) and nuts into food processor, transfer into bowl and combine with butter, until all crumbs are moist.  Set aside 3 T of crumbs.  Press remaining crumbs into 10 inch tart pan (Can use pie pan)

Filling:

-In medium bowl, combine egg whites and sugar, beat with electric mixer until soft peaks form, set aside.

-In large bowl, combine remaining ingredients, whisk together until well blended, fold in egg white mixture.

Bake 350 degrees for 25 minutes.  Remove from oven, and allow to cool completely before removing from pan.  Sprinkle with reserve crumbs.  Serve with whipped topping if you desire.
