Yes it takes a lot of ingredients to make this yourself, but here is your chance to make it homemade. If anyone has any feedback, please share. This recipe is Gluten Free if anyone needs to know.
Ingredients:
1 Can Hunt’s Fire Roasted Diced Tomatoes(can use any tomatoes of your choice, these are my favorite store bought)
1/2 C Black Beans, drained and rinsed(red beans are fine, I had black, and they taste great)
1T Chili Powder
1 tsp. Fresh Ground Pepper (I use a 5 pepper blend)
1T Dried Basil
1T Dried Chives
1tsp. Dried Thyme
1/2 tsp. Crushed Red Pepper
2 tsp. Oregano
1T Parsley
2 Green Onions Finely Chopped
1tsp. Paprika
5 Cloves Garlic, chopped finely or crushed
1sp. Paprika
1tsp. Sugar
1tsp. Soy Sauce (low sodium is fine)
2 tsp. Salt (seasoning or Garlic is fine)
1 Mini Red Bell Pepper (finely chopped)
1/4C Chicken Broth
-if you like yours spicier, add 1/8-1/4tsp Cayenne Pepper or a few dashes of Tabasco Sauce
Directions:
- Mix all ingredients together in small pot over medium heat. Bring to boil, reduce heat and cover 30 minutes. Cut off heat, but allow pot to sit over burner.
2. Cook Basmati or brown rice per package directions.
3. Cut smoked sausage* in half and fry in pan, both sides. Remove and slice.
- Mix rice, smoked sausage and red bean sauce together. Enjoy.
*I use turkey smoked sausage(only use half a pack, but you can use a whole pack if you desire), but any kind you choose is fine. This is usually pre-cooked, but if you find raw, please pre-cook before mixing into rice.
-Can also sauté green bell pepper and small medium onion in butter and salt, then add to finished rice mixture.
