1 Carrot, cut small
1 Celery, cut small
1 Small Onion, chopped fine
2 Bl/Sl Chicken Breasts, cut into cubes
2T Olive Oil or Coconut Oil
1 tsp. Seasoning Salt
1 Garlic Clove, chopped finely
1T Sweet Chili Sauce
-Can add any other veggies you choose. I added cabbage, finely chopped. Can also add any other seasoning (I love Tumeric in this recipe) you may choose.
- In a large skillet, heat oil over medium heat (test readiness, by sprinkling cold water over oil, if it sizzles you are good, if it pops reduce temperature). Once oil is ready add salt and all other ingredients to pan. Coat ingredients in oil, chili sauce and seasoning. Cook about 15 minutes, until chicken is almost done, and veggies are starting to soften.
Add in either homemade or store bought chili sauce (about 1 C), stir into chicken/vegetable mixture, cover over low and cook about 15 mintues. Remove from heat.
3. Serve warm over pasta or rice of your choice.
